I intended on this going out this morning - Celia had other plans. Starting next week I’m going to do my best to get these meal plans out on Friday afternoons!

Things I’m doing today to bring more happiness to my day:

  • Pick one area of the house [haven’t decided which… maybe the fridge and kitchen] and clean it. I find so much peace in things being clean and organized so I know that’ll help a lot.

  • Give myself a neck massage [I have this TheraGun and it’s one of the best larger purchases I’ve ever made].

  • Go for a walk outside or play fetch with Vienna.

  • Face plunge.

  • Workout.

  • Take my vitamins and eat nourishing meals.

This recipe is really inspiring me! Lush Vanilla Berry Pudding. Of course I want to make it ~healthy~, but I’m loving the vision. I live for icebox cakes and the like during warmer months.


☀️ WHAT TO ENJOY: This is a new category for me, but I am still reading Iron Flame and it just felt silly to add that in YET AGAIN. So instead, we’re talking enjoyment. This isn’t even something you’ll enjoy on its own, but it’s something that will maybe make the things you do more enjoyable. It’s literally just background music. I hope it makes your day more enjoyable. quiet mornings, slowly waking up to the smell of fresh coffee

📺 WHAT TO WATCH: I haven’t watched this yet, but we just had to move every single thing out of our closet since we’ll be doing renovations in there too. Mind you, we were told the demo would happen on Friday and then it alllll got pushed until the end of June. So that’s fun. ANYWAYS! I am a chronic clothes clear-er outer [aka I constantly edit my wardrobe and give stuff away], but after pulling everything out I realized there are still a ton of things I could give away. So I plan on watching this to make my intense, cutthroat nature even more insane. Try this wardrobe decluttering technique & thank me later

🎧 WHAT TO LISTEN TO: Granted I haven’t listened to this full podcast yet, but fair warning the title is click bait. However, I admire Dr. Amen and his knowledge so I think this is still a worthy listen! Does Cry It Out Damage A Child’s Brain?

I often dislike sharing things you need to purchase for a “wellness tip”, but I’m really excited about this Canopy Faucet Filter. My plan is to add it to the guest bathroom since I tend to wet Celia’s cloth wipes at the sink in there and I would really prefer for the water to be filtered.


I make these meal plans in mind for my husband and I. For reference my husband is 6’5” and 200something lbs and works out daily and I am 5’2” and 100something lbs and also work out almost daily but am breastfeeding so my caloric needs are very high right now. We also drink tons of water, take supplements, and have fun non alcoholic beverages (some caffeinated some not) through the day.

Don’t feel intimidated by the fully planned out list. Even if you just take a couple things of inspiration that’s better than nothing! I try to make these lists keeping in mind that most people don’t work from home, so if that’s you and this still seems INSANE please let me know.

And yes, groceries are expensive, but eating highly nutritious food at home is still cheaper than eating out for every single meal.

Monday:

  • Breakfast: "Eggs are repulsive” Chocolate Chia Seed Pudding

    • *MAKES 4* so you can eat it for a couple days

      • 2 cups milk

      • 1/4 cup chia seeds

      • 1/4 cup cocoa powder

      • 2-4 tbsp maple syrup or honey

      • Add everything to a bowl, jar, tupperwear, etc and shake/mix to combine. Let set overnight.

    • Toppings:

      • Strawberries or raspberries would be ideal here

      • Warmed/chopped walnuts

      • Roasted pumpkin seeds

      • Hemp hearts

      • Yogurt

      • Cottage cheese

      • Homemade whipped cream

  • Lunch: Sardine Sourdough Toast —> I keep bread in the freezer so I only use what I need without feeling compelled to keep eating bread.

    • Toast a slice of bread with butter or ghee until golden. Remove from the heat. Add a small spread of seed oil free mayo. Top with sardines (option to warm them first), dill, lemon juice, salt, high quality olive oil.

  • Snack: Hard boiled eggs OR beef jerky if eggs really are repulsive rn

  • Dinner: Coconut Rice Ginger Beef Bowls

    *make enough for leftovers :)

    • Coconut aminos beef, coconut rice, cilantro, mushrooms, bok choy, kimchi or sauerkraut. Everything in one bowl. (MAKE ENOUGH FOR LEFTOVERS)

    • RICE: start first so it can cook while the beef is cooking - I typically use jasmine white rice. I rinse the rise thoroughly and do 2 parts liquid to 1 part rice. In this case I’d do 1/2 water or broth and half canned coconut milk *ideally a BPA free can* - I make enough to where I can use the entire can of coconut milk. Bring liquid to a boil, add rice, stir, lower temp to low, cover, and cook for about 15-20 minutes or until tender and fluffy.

    • BEEF: I’d use 1 lb strips of flank steak here. In a bowl combine 1/4 cup coconut aminos, 1 tsp grated ginger, 1/2 tsp or one clove grated garlic, 1/4 tsp turmeric, a pinch of salt, and a crack of black pepper. Heat skillet over medium high heat and add 2ish tbsp ghee/tallow/olive oil. Add beef and cook undisturbed for about 5 minutes - this will let it brown nicely. Then use a spoon or spatula to scrape up the beef and continue to cook until no pink remains. Pour over the sauce (beware will probably sputter) and mix to combine. Lower heat to low and cook for 1-2 extra minutes - until the sauce thickens.

    • Mushrooms - cook at the same time as the beef if you’re feeling motivated! Just slice, add to a pan over medium high heat with some oil in it, add mushrooms and cook undisturbed for about 5 minutes on the first side - seasoning with salt as the cook. Then mix and continue to cook. You can add a splash of water to the pan so you can scrape up all of the browned bits and further soften the mushrooms.

    • Bok Choy - I would roughly chop 1 lb bok choy, mince 2 cloves garlic and add both to a pan with a little oil over medium heat. Sauté until wilted.

  • Dessert: A couple pieces of dark chocolate
